Can't find save!

I'm playing with The Final Modpack v1.9.7 and using nightly 2017-08-11 02:03.

I've looked in Documents and Documents/My Games and don't find any Open Xcom folder, and in my Open Xcom installation folders there is a user folder but with no save games, just my options config and The Final Modpack installation. I cannot find my save game for the life of me!

Searching for .sav also is not coming up with anything. My save is fully functional in the game however.

EDIT: I should also note that I have Show hidden files and folders enabled so it can't be that they are hidden

Check in your "%LOCALAPPDATA%\VirtualStore" folder (copy-paste that path into explorer). OpenXcom can't write to files in Program Files, so Windows will be redirecting it to the VirtualStore.
