You shouldn't need to uninstall the steam version, and after removing your previous OXC stuff you should make sure you deleted everything, including the user folder it created, but the rest of that is exactly right.

The only other thing I would add to ohartenstein's remarks is that the nightlies now have an installer .exe so it has gotten even easier.  It will find your files in your steam install, and move them for you.

you still have to launch openxcom from the nightly install to get the user folder for your /user/mods folder to put Area 51 in.
