You mean the word?
The word itself, in given context, just means the process of making someone a knight.

Or consequences of the choice?
What happens after "Knight Dr. X" (available only in Dr. X "Prank her" path) only Dioxine fully knows right now.
What is currently known for sure is that it disables the alternative "Marry Dr. X" path.

The Dr X story arc got extended further in L8. One extra step for the prank and vampire routes. after the new story mission you get to do some more choices with with the doctor.
