my screenshots were located here:

C:\Users\Administrator\Documents\OpenXcom

which also contained options.cfg, openxcom.log and my saved games.
necroing because the wiki link didn't help me

The specific information in the docs is here:
https://github.com/SupSuper/OpenXcom#windows
But the doc is still a simplification : in practice, OpenXcom asks Windows what is the physical storage for the "My documents" folder of the current user.
This can vary between locales (".....\Mes Documents"), and even between specific user accounts or installation setups.
For example my work computer is set up so that every account will have documents in D:\users\<username>

In my case it is %game install folder% -> user(folder) -> xcom2(folder again) -> screen000.png
