Help / A question about timescales

Howdy folks,
I was looking to mod the game to be a bit more leisurely, instead of having a few months to play the game, I would be more looking to play the game for a few years.
I have googled around and read a few modding tutorial things but there doesn't seem to be much in the way of what I am looking for.
(Alternatively, if someone can tell me how I could edit my save to return me to day 1, that would be fantastic)
Any suggestions?
