I seem to only be getting plasma splitter parts.

implosion launchers are bombers and battleships.

I remember occasionally getting gatling lasers from normal freighters.

You can get Gatling lascannons from military craft larger than cruisers, or from some smuggler ships too.

Does it matter what weapons I use to down those ships?

nope. The state of the craft is not altered by what shoots it down. Every engine in a shotdown has a chance to explode.

The pink ship (that one with the single magicial girl) can have gatling laser parts.
It's rather rare since the engine destroys alot of rare loot most of the time.

What do you mean by that?

The engine is in the center of the ship.
The explosion can destroy rare loot like the golden crate (money after all), cakes or those lovely impalers.

Pink ships land, don't they?

In my experience, they always land.

For reasons they run away once you tail them or got too close with the dropship.
Maybe bad RNG for my part.

Pinks do tend to be a quite fast mission profile, so it's not uncommon to catch one on the tail end of it's spawn if you dont have worldwide coverage. After they land the tend to proceed directly to exiting the geoscape so catching them early is crucial.

Uh, but the only things larger are battleship and silver towers.

Bombers and I think destroyers count too. Bombers may also have the elusive implosion bomb launchers.

Pink ships always land, but if you're too cheapskate to have decent radars...
