When a vehicle runs out of fuel it returns to base, with the only options being Ok, Ok-5sec
Sometimes the vehicle arrives at night time to a mission that you want ideally to do during daytime.
In this cases, I don't start the mission and I put the vehicle to patrol over the target mission, waiting for daytime to come.
However, it could happen that before daytime arrives the vehicle runs out of fuel and just goes back to the base.
It would be very useful if the vehicle alerts of low fuel a bit before, so when this happens you can still move a few miles and start the mission.

This seems more of a problem of player dispatching their craft too soon, rather than not being able to do anything after being alerted of low fuel.
Now, there does exists an option: Advanced > OXCE > Geoscape > Show estimated flight duration, which shows something like "ETA: 5h" to the player.
I think a good solution here would be if this "ETA: 5h" would be changed to "ETA: 5h 🔵", where the 🔵 (moon) is shown if the craft will be arriving at night time. This way a player would be able to delay the launch until they're sure the craft will be arriving at day time, rather than having their craft hover over the landing site until day time.

How about throwing overboard several ammo boxes, a hwp or even couple of unfortunate soldiers, for giving to craft ability to stay afloat those cruicial miles? (as in beginning of "Mysterious Island" by monsieur Verne)

The original game designers and the modders want you to do night missions.
That's why missions despawn and craft have limited ranges.
Working around this should be as painful as possible.
Decision whether to stay patrolling one more hour to wait for dawn... or risk running our of fuel... or risk terror site despawn and penalty... is one of the core decisions of xcom players.
And one of the most memorable.
I'm not taking that away from the players. It's xcom.
PS: if you don't care... feel free to increase/mod the fuel capacity of your craft to never run out of fuel... or increase/mod the duration of the mission sites to never despawn

And if I recall correctly there was option to set shade level of mission, effective allowing it be in daylight

There's also 'minShade' in OXCE that limits the shade so it's not darker than a certain level for missions too or the global 'maxDarknessToSeeUnits' where you can set the max darkness where units can see normally, making this last value as 15 means that x-com units will see just as normally as in daytime, without changing the shade on a per mission basis. Plenty of options to custimize as desired.
