Title: Is it possible to consult the bootypaedia on an enemy in battlescape?

I know you can middle-click on guns to see their entry, is there some hotkey to check on enemies? Or a way to open the bootypaedie?

Press "u" practically anywhere to bring up the bootypedia menu, and once the next Piratez version is released there will be many more things you can do with middle-click.
